No you cannot change or choose the exam date or slot of exam as it is fixed. The exam is on December 20th for Online test.

VIT and Gate both are 2 different exam and there is VITMEE exam for M.Tech admission in VIT and as of now there is nothing declared for its application form but as per previous year information, it should be released in the month of March and exam will be held
You can't get admission in MCA through GATE. GATE is for Master’s programs and direct Doctoral programs in Engineering/Technology/Architecture.
For MCA, You can appear for NIMCET exam to get admission in NITs and there are several other university level and state level MCA entrances for which you can fill form.
