As per the new guidelines, the B.Tech admission in GGSIPU will be done through National Level Examination JEE Main, therefore the JEE Main criteria, as well as the eligibility criteria for GGSIPU, must be fulfilled. And, therefor, yes jee mains percentile affect the ip admission counselling.

Securing a seat in an nit depends upon the All India Rank but not upon the percentile. I see that you have qualified jee mains 2019 as you mentioned your percentile is 81.48 and as  you have not mentioned your rank its a bit hard to say about it

There is always a chance but not a very high chance which also depends on the course that you want. You are likely to get an IIT but as I said it depends on the course tha you want. So you can try through all the exams that you have

 The cutoff  for AYUSH is around 300 for UR category.  Ayush courses and counselling for bams will be held state wise so cut off depends upon ayush ministry of state govt. But most probably it would be 300+

However most of the seats for AYUSH remain vacant after the counselling.
