No matter when the results are out the batch determine the year of passing if you are enrolled in the batch 2013-2017 you will have to put the passing year as 2017 which is clearly written on the top of the certificate.
And as you stated that the result are printed and out in 2018 and the date is mentioned at the bottom it is already understood that you have the batch of 2013-2017 and the results of the final year came out in January 2018, so there is no need to stress.

As long as you fulfill the eligibility criteria for NEET which has been mentioned below, you can appear for NEET;
As of now there is no upper age limit, and NIOS candidates too are eligible to appear for NEET, hence if you fulfill the aforementioned criteria you can appear for NEET, the gap years won't have any impact .

Hope you are doing well. As for your question ,you mentioned that your caste certificate was issued in 2018 .Generally the validity of a caste certificate is of 1 year,so you need to get it renewed this year for participating in NEET-2021 counselling.

Yes, you can appear for JEE Main and JEE Advanced even if there is gap in education in between class 10th and class 12th. A candidate can appear for JEE Main for three consecutive years from the year of passing in the qualifying examination and he/she can appear for JEE Advanced for two consecutive years from the year of passing in the qualifying examination that is 10+2. There is no age limit to appear for JEE Main. Candidates appearing for JEE Advanced 2022 must be born on or after October 1, 1997.
