VIT does not release official cutoffs as such and thus this answer is based off of previous year rank statistics. It is slightly difficult for you to get CSE in VIT Vellore/ Chennai even in the third category but you have really good chance of getting CSE in VIT Bhopal. It is expected that the number of students intake will increase this year but still Vellore/Chennai is a remote possibility.

Yes you can do AI after mechanical engineering.
Data science requires a composite skillset of statistics, programming and communication skills that is hard to come by. Very few have formal training in all three areas. That’s where the monicker “unicorn” comes from, because people with this profile are so rare. There are specialized master’s programs in data science now, but they have only started popping up very recently.
The job market for data scientists has exploded in the last few years. With so few qualified candidates, the best ones can demand very high salaries.
Core branches of engineering like mechanical and electrical, on the other hand, have very long traditions. There is a steady supply of freshly graduated engineers every year. There are also plenty of experienced engineers in the job market, willing to work for reasonable salaries. Educational institutions have found an equilibrium with industry a long time ago, providing just enough engineers to keep the power balance between employers and employers fairly equal.

Engineer, in my opinion, is only the real engineer. We have some misleading titles nowadays like “software engineer” and “machine learning engineer”. OMG, when companies will realized who is a developer, who is a computer scientist and who is an ENGINEER?
Easier schedule. If you want to learn everything that you need to know to work as Junior Data Scientist would take at least +1 year with a crazy routine (12 to 14 hour per day of study/work). I'm already taking into account your statistics and math familiarity.
Higher salary. Given a normal distribution, right if you analyzed most of the available jobs.
More interesting? that's on you.
Not many people doing it. There's a lot of people doing it right now. Lots of courses, workshops, hackatons, news. The problem is that the demand is higher than the supply.
Package if mechanical engineer in Trichy
If you are a part of some technical club and had done some amazing projects in the past besides some other curricular activities then your package may be highest of all easily more than 15lpa ( in core companies). If you are just an average guy then your packages will be quite less around 5.5–6.5 lpa (if you have not done much in internship/summer project) and 7–10lpa(for sincerely working in internship and able to convince interviewers about it). If you have coding/management skills then you might land in one of the highest packages companies got to offer. Eventually it depends upon how well your resume is and your impression on interviewer

Heritage however, accepted upto rank 7688 for CSBS, so based on your rank of 6317 you might have a chance of getting Computer science and business in Heritage.

The course of Diploma in Artificial Intelligence isn't offered by any institute in India. So if you wish to do AI, then the best option will be for you to go for Diploma in Computer Science Engineering and after the completion of the course, take admission through Lateral entry to BTech Computer Science & Engineering course with specialization in AI or BTech in AI etc courses. Also if you wish you can complete your 10+2 and by qualifying an entrance, you can take admission to the course of BTech in AI and BTech in CSE with specialization in AI.
