As per previous year trends, the lowest score which got admission in NIT through JAM score in Chemistry under General category was 33.72. The admission was given in NIT Sikkim. So, considering previous year trends, it seems unlikely that with a score of 26.67 you will get admission

The admission is based on your scores and not on rank. In 2017, the cut-off for OBC-Non-creamy layer was 36.39 in Round-1. In Round-2 it was 34.01 and in Round-3 it was 32.34

Yes, you can go for dairy tehnology in engineering if you don't have biology as a subject.
You should have PCM as your subjects in class 12th.
