Yes. You can refer NCERT for JEE MAINS for all units. It will prove beneficial for you.

It's recommended that you read and revise INORGANIC from NCERT. Also, you should remember all the reactions present in NCERT for Organic Chemistry.

No, it is not compulsory to choose subjects of your graduation only. You can choose any subject of your choice in the Mains exam. There are 25 subjects available from which you can choose.
