It depend on your goal. But I suggest you to choose that subject in which you are very good in that subject and you can continue your higher education in that subject. It means if you are good in chemistry than you can choose chemistry in ug and pg. But

No any book is good enough for theory as well as practice. Yes, there are some books in the market but I don't think they are of that quality. For physics you can have Concepts of Physics by dr h c verma for theoretical and subjective practice purpose and
