Hello aspirant,
No gap do not matter for IIT JEE as according to eligibility criteria of it there is no upper age limit so don't worry you will be eligible for jee 2021 until and unless criteria remains same.

Yes you can take a drop for a year and appear for both boards and JEE Mains in the year 2021.
Well, I would suggest you to keep your studies of class 11-12 in continuation and not go for the drop option because class 11 is the base
