can i be an international cabin crew with nios?....even its airlines like emirates?

If you have completed 10+2 then you qualify though some tend to ask for higher education. In India it is better to do your degree as your exposure to develop the above qualities needs some time and if you have this aim then you can concentrate on developing those qualities.
NOIS is just distance learning and since you have not mentioned what you are studying for. If you are working then NOIS is good but to develop those skills we talked about a college environment is better - like joining an aviation college to learn about being a cabin crew.

I am registering for MHT-CET. It asks for the location of my school and lists only Indian locations to select while my school is in Sharjah, United Arab Emirates. What should I do? In a PDF it says that international students are not required to write the exam but I want to write it.

You are not eligible to sit for this exam because first you are a foreigner and second this exam eligibility criteria says that the student must be an Indian National.
