For the calculation of percentage one of the important subjects is english, after that you could choose any four core subjects. So to consider environmental education would be fine to consider to calculate percentage for Maharashtra board.

Hello student yes if you've secured more than 55 %marks in post graduation then yes you're eligible as eligibility criteria says - Candidates must have post graduate degree in Humanities,social science, computer science and applications and electronic science etc with minimum 55 percent are eligible.

Yes, Environmental education marks in 12th  may be considered for the calculation of cutoff. Subjects like physical education, music etc. are generally not considered for calculation of cutoff marks.

For IISER Aptitude test cutoff marks calculation you can use environmental education marks and they are considered for cutoff marks

The top 20 percentile for jee mains or advanced is calculated by boards only, maharashtra  board in your case. They will send a report of total marks for students of top 20 percentile to JOSAA. You can find top 20 percentile for last years from josaa website.
