You are a non-resident of Gujarat but according to their eligibility criteria , you must have a Gujarat domicile.

Hey, while filling your form they ask you about Centre of your choice. The center Number is the number allocated to a particular center.

You can follow the given link. This link is of the official site of GUJCET. Read the instructions carefully, they have mentioned clearly about the center

I think the only obstacle in this would be a residence proof which you can get quite easily from local authorities. if you have that stating you are bonafide resident of gujarat state then you are eligible.
