it is very difficult to get placement in Ceramic,pharmaceutical,industrial chemistry, mining(don’t go with avg placement they completely hide reality, only 9% people placed)
only few student is able to changed their branch.(also it is subject to vacant seat )
don’t go with tag of IIT after 4 year if you don’t have job you will regret whole life.for choosing this.
GO with better branch over better college.

Mathematics and Computing is a good course although not as much as in demand as for CSE. Since they are top ranked universities in the nation and there is not exactly much of a difference in the quality of education since they will be given maximum attention and facilities. But due to the ranking of various factors I would suggest this university. It all comes down to your choice of course. IF you are choosing to take CSE, you can take CSE BTech in IIT Bhubaneshwar since you can choose your specialisation to take MTech later. But if you plan on taking Mathematics and Computing, then you can take IIT Kanpur since it is a higher ranked university.
And it also matters that what is your personal choice of course since they are different departments.

Infrastructure and college life:
IIT Kanpur has a good infrastructure with well equipped labs and classrooms. Hostels are pretty decent and nice environment is always maintained. All the faculties are qualified and experienced over here. And education, curriculum is made in such a way that students are made to acquire more hands on knowledge than just the theory. Yeah, I suppose you can obviously do that ,provided you perform excellently in JEE Main.Only thing which you cant do is reappear for JEE Advanced and move to another IIT.
But my suggestion would instead of planning to waste a year and work for JEE again after moving to IIT, which itself is quite difficult and is quite a tedious and monotonous, you could plan to work seriously with the curriculum in first year, and subsequently slide branches to CSE/ECE/EE and hence open a whole range of opportunities to yourself.
At IIT BHU, the Branch Change policies are comparatively relaxed and easier than its older couterparts, IIT Kanpur, IIT Kharagpur and other top IITs.
One thing you can rely on in IIT BHU, is the sea of opportunities you get during Internships and Placements be it in Core/NonCore/Finance/IT/Consultancy besides the IIT tag. So, the ball's in your court, choose wisely, at the end its your career.

Both are some of the best Institutes in India. Firstly it depends on your choices. Do you want to pursue geology? Because it's really different from engineering which you would've initially goaled for. In terms of colleges, IIT Kharagpur is preferred over IIT BHU but both are great colleges, make a choice depending on what field you want to pursue.

The highest package is 2 crores PA.
The average package is around 11-12 lakhs PA.
The lowerst package is around 8 lakh.
Moreover I would recommend you to study with utmost focus, dedicated and hardwork.
