The latest criteria declared by the JoSAA Authority are to be considered during admission process. Top 20 percentile criteria means the candidate has to overtake 80% students to be among top 20 percentile. It changes every year as the performance and question level changes.
But a student is considered to be in top 20 percentile in his or her batch only. Suppose a student passed 12th in 2018, then his or her top 20 percentile will not be compared with the batch of 2019.
If the student is in top 20 percentile in his or her batch then he or she stays in top 20 percentile. It can not be changed.

So, first of all what you did is phenomenal honestly. I know you must be stressed but see the thing is most of the students take at least a year gap after 12 for preparations. Obviously you will be questioned about taking a drop year but if you fill the companies CGPA criteria and have proper knowledge in your field you will get a good placement. It depends on your hard work and focus. Other than that I don't think it would affect your placements that much or at all.

Your jee mains total score for the attempt percentile is 75.0900995 and your individual scores are Physics : 65.1666319 Chemistry : 83.2971544 Mathematics : 62.1081194 .Which shows how and what field requires more practice. Your rank will be calculated by the overall percentile basis.

I appreciate that you ask this question but unfortunately the recognized authority doesn't reveal any data like this which contains highest score scored by a SC candidate, they only reveal overall highest score and the highest score in JEE 2019 is 346 marks scored by Kartikey Gupta
There's no information about category wise highest scorer in their official website but yes if you want to know overall cutoffs for SC candidate and it's syllabus then you can visit the following link:-
