To become an IAS, you will have to appear for UPSC examination. Here are the minimum educational qualifications that are required for the same:
- You must have completed your graduation in any discipline from a recognized university.
-You can also apply if you are in your final year and no minimum percentage is required for eligibility.
Based on this, it really does not matter much that from which educational background you are from and you can choose any management course. It would not affect your chances in UPSC IAS.

For the BBA courss in aviation candidates must have passed class 12th with at least 50% aggregate.So yes you are eligible too to pursue BBA in aviation management.There are various scopes and opportunities once you pass out BBA in aviation management you can become flight manager,dispatcher,traffic controller,passengers manager etc.

In Canada, GRE is required for master's level admission, and some universities and programs may need a good score in the test too. The students who intend to study business don't require appearing for GRE exam. There is no such qualification for appearing for GRE examination.
In Australia, GRE is not required compulsory to study there. However some universities in Australia require it for MBA admissions. While this score is not compulsory but it can be helpful if a student seeks scholarship opportunities.

As per the reviews, the placement records for BBA are ranked in this order:
1st IIKM Business school (however MBA students are preferred over BBA, but it has good records than other mentioned colleges).
2nd AIMS Banglore (BBA students are allowed to sit in campus placements only after all the MBA students are placed)
3rd HITS Chennai (College has good placement records for BTech students, many BBA students opt for higher studies)
4th IIFA Multimedia, Bangaluru (As it is a multimedia school so it has good placement opportunities for design students rather than other branches).

Well, you can definitely pursue architecture course after graduation if that is what you wish to do in future. Also you can get into Project Management as well but I suggest you should work hard in your own stream assuming you have not lost your interest in the field. Don't ever fall into false claims by anyone that such and such field is very good or you can make more money in a particular branch. Your passion must drive you. There are many engineers who go for MBA and excel in that field as well while some stick to their streams and do M.TECH instead. Many civil engineers grab government jobs as well and there are some who prefer becoming IT professionals rather than willing to go to "construction sites"!
So what I would suggest is follow your passion, choose a field in which you are most comfortable working.
