As the NIOS score, is recognized by the Government of India, so you will be able to take admission under most of the state colleges as well as other colleges in India. Yes definitely ypu can go for NIOS exam for maths to be eligible for appearing in JEE exam.
NIOS is a recognized board if you qualify on demand Mathematics examination from NIOS board yes you're eligible to appear in Jee main.
Admission for NIOS senior secondary is based on your Grade 10 qualification. So, there is no question about which subject you studied in Grade 12 from any Board. You can still enroll for Physics through NIOS On-Demand exam.
