No, you cannot get direct admission in IHM without NCHMCT-JEE. IHM BSc admission is done on the basis of NCHMCT JEE. Students are allotted the colleges on the basis of All India Rank (AIR) in the entrance examination.
IHM MSc admission is done on the basis of rank obtained in NCHMCT JEE, followed by NCHMCT counselling.
IHM PG Diploma admission is merit-based and there is no entrance examination for admission to MSc. The course duration is one year along with three-months of industrial training.
IHM Craftsmanship Course admission is done on the basis of merit.
Hence, the entrance examination is only for BSc and MSc admission at IHMs.

The results for NCHM are already out for the year 2020, according to the latest update an availability of more than 70 institutes take admission on the basis of this national level entrance exam. The National Council for Hotel Management & Catering Technology (NCHMCT) is an autonomous body under Ministry of Tourism, Government of India thats runs and facilitates the academics for B.Sc. Hospitality & Hotel Administration.
There are quite alot of Institutions so you can say more than 500 seats available.

Once you submit the LUT it will be valid for the whole financial year. For each financial year you have to submit LUT.

IHM Jaipur - Institute of Hotel Management, Catering Technology & Applied Nutrition in 1st round of counselling. Last year cutoff rank closes at 3843.
IHM Hyderabad - Institute of Hotel Management, Catering Technology & Applied Nutrition
IHM Chandigarh - Dr. Ambedkar Institute of Hotel Management Catering & Nutrition in 2nd or 3rd round of counselling.

If you have confidence that you will be allotted better college then the first round allotted college then you can go with second round but few things you need to consider wheather to freeze your first allotted college or not ,i suggest you to pay the fee and then participate in second round because in first round almost 70% seats will be filled so again in second round if you get bad college then your previous one then you can't go back for your first allotted seat if you didn't freeze your seat so i suggest you to pay for it and try for second round , so you will have 2 options
