It totally depends upon the factor which is that if you are a coaching student are you are preparing by your own. Now if you are a coaching student of any institute then NCERTs along with the coaching materials are more than sufficient for the preparation.
And if you are not a coaching student then you should refer some books which will definitely help you and you can easily crack the examination by your own also as much of the students do. Here is the link which I am providing you and you can refer to it to know such books.

See, syllabus of your class 12th is in NEET, which will also be part of your board exams.
So when you are doing your class 12th subjects, do it for both NEET and boards
Divide 6 months into slots - based upon months approaching towards board exam.
For board exam, one month will be enough to practice writing. Meanwhile you can give 2-3 hours to your class 11th topics for NEET in starting months of these 6 months.
So that you don't loose your grip over class 11th subjects too.
Start looking at previous year questions to get an idea about how much effort you have to put in order to get a government MBBS seat

Yes ncert is must,don't leave ncert for jee mains and neet ,it is base ,also don't skip the question given in it ,however back exercises question is not of the neet level ,they are for mains and sometimes advanced ,from my point of view finish every chapter from ncert first and then only go with another standard books like HC Verma,sl Arora etc . If your fundamental will strong ,no one can beat you !

With reference to your above mentioned query, I would like to tell you that there are no ways from which you can do Engineering and Medical simultaneously. As both mbbs and engineering are very different, they are poles apart and there is no provision which allows to do both mbbs and engineering at the same time . So ,even if you qualify both jee and neet , you will have to choose either engineering or mbbs.
Further, if your wish is to study and know something more about Engineering fundamentals while doing MBBS, then you can learn Engineering fundamental concepts free on Youtube or on GOOGLE. There are number of Youtube channels that are ready to teach you basics of Engineering as your interests align in Engineering.
So, you can learn some courses on Youtube or GOOGLE to learn Engineering and Medical Simultaneously.
