To talk specifically about, IIT- Bombay, you need to crack the JEE advance examinations to make sure to get into your desired college.
Your belonging to Uttar Pradesh won't matter if you clear the entrance examination of a particular college/University.

Its a good percentile in MAT Exam and have fair chances to ace it.

MAT Is not known entrance exam as compared to CAT,XAT,IIFT.
According to previous year cutoff, some of good colleges accepting MAT Scores are :
1. Welingkr Mumbai , Banglore ---- TAPMI 95+
2. BIMM,pune 80+
3. BIMTECH, Retail 85-90+
4. SIES 95+
5. XIME , Banglore----- IMTY HYd 85-90+
I would suggest not to go beyond those college and try to be in tier 1 and 2 b schools.
