It shouldn't be an issue. Because income might change but category doesn't. Submit your old certificate during counselling and request them that you'll submit the new one in a couple of days. 

It depends from college to college,Generally it is adjusted with your fee amount.

I would suggest you to just contact your college in which you are confirming your seat,that they will adjust it later or not,Be clear from your side,
