With an obc rank of 56k it could be highly difficult for you to get a seat in any nits.your home state which is of utmost importance for such question. You should try for councelling in your home state nit because they have seats reserved for their local applicants.

I don't think it's possible to change your category from general to obc as the results have been announced and you have been allotted a rank in the CRL.
Nta does give you opportunity to edit any such details before the jee mains exam. So it's a fault by

I have specified my category as General-ews in jee Advanced but i got my ews certificate (issued after 1st April) now. Neither i have uploaded the form for declaration in the delay of certificate on the official website. Now what should i do to get the benefits of this quota?

You should have uploaded the declaration in support of your category. However a notice from JEE Advanced authority had been announced that said,

" Due to COVID-19 related restrictions hindering the issuance of various certificates in time, valid category certificate(s) may be uploaded at the time of reporting after seat
