I would say Mathematical Statistics...
Why?? Ok let me elaborate a bit -
Compition you face in mathematics is much higher in comparison to MS exam, so eventually chance of getting admission is more with MS.
Statistics is in demand everywhere, so gives you better career options...
Better Placements:
Statistics - Almost 100%
Mathematics - generally 6/7 students out of batch of 30(It doesn't mean that masters in Mathematics is not good but most have aspirations for higher studies)

P.S : You have to put in a lot of efforts in mathematics to pass or get a good grade in comparison to statistics where life is much more easy (source : Personal experience)...

I didn’t opt for any coaching institute. And I was also a very weak student in Statistics, so weak that even after 2 years of BSc(hons.) in Statistics I could not reproduce the PDFs and PMFs of common distributions correctly, forget about MGFs. I barely used to score 60% and that too just to maintain my Inspire Scholarship.
Given, this background it was a hard decision to start preparing for JAM, but at that time it seemed to be the best alternative I had, since I failed to clear enough Actuarial Papers to get a good job. So, I started working for it, I used to put atleast 4–5 hours of study everyday in those 50 days.
Few points that I feel can be useful :-
Stick to the Syllabus- If you strictly adhere to the syllabus then you’ll realize the syllabus for JAM MS is actually very short . Each topic which can come in the exam is clearly mentioned in the syllabus, do not do anything more or less than what is given in the syllabus . For example, if it is written “maxima and minima of functions of one and two variables” just stop with it. But books may, in continuation with that topic, also include “maxima minima of functions of one and two variables with constraints” which you should not do since it is not going to come in the exam.
Solve Previous Year Question Papers - JAM questions are pretty interesting, they’re neither too easy nor too tough. You feel like you’ve solved it correctly but later after checking the answer keys you realize you fell for a trap. I haven’t so far seen any source (books or website) which contains questions with level at par of JAM MS. Hence the best source you have (as of know) to practice JAM like questions are the JAM previous years only.If I come across anything better I will post it in the comments. You have the official answer keys for JAM 2014,2015,2016,2017, use these 4 question papers as mock papers and attempt it under strict time control. For 2016 you can get an estimate of your rank and get an idea of your selection chances using the graph and data set given in this answer. Vishaal Sudarsan's answer to What are the minimum marks needed to qualify for IIT JAM mathematical statistics? . I will do a similar work for JAM MS 2017 later when I get time and post it here.
Books - This is highly subjective, people from different parts of the country follow different books followed in their University. I have seen students from Calcutta University following different books as compared to what I have followed. I will mention the books I used, but they are in no way the only books which can be used for JAM preparations. You can use the books recommended by your University (and available in stores or libraries near you), just keep in mind point number 1 . I did my Bachelors from Kirori Mal college, University of Delhi, hence the books I used are mostly the ones recommended by the Delhi University, hence they were easily available in my college library. These are the following books that I used :-

Introduction to Matrices by S.C Gupta
Integral Calculus by Shanti Narayan
Differential Calculus by Shanti Narayan
Calculus: Early Transcendentals by James Stewarts
Statistics
Fundamentals of Mathematical Statistics by S.C Gupta and V.K Kapoor
I later learnt (after coming to IITK) that they’re are not good books (except a.iv), they’re are only meant for students who want to score good in “Indian Universities”. However, if one is starting late for JAM, like how I have done, then these books will do the Job. They’re good enough to crack your entrance. However, to get a better understanding of Mathematical Statistics there are much better books available in the market, to give an example Mathematical Statistics by Jun Shao (though this should be the last book to consult to crack JAM this is how our education system is :/).

Make sure you complete your syllabus atleast 20 days before your exam and have sufficient time to practice all the previous year question papers. Solving Previous year question papers is a must. While using the above mentioned (or similar) books do not try to practice unnecessarily lengthy subjective questions, as these books are actually meant for university exams and not such objective entrance exams. Never do proofs just try to get the concepts and memorize the formulas (arc length, volume, PDFs, MGFs, mean and variance of some common distributions etc, I used to write them all in a sheet of paper every morning since I never memorized these things in my 2 years of bachelors :p ) ,solve only short JAM type question if you find any or else just practice the previous year questions.
Lastly and most importantly, a student fails to crack JAM not because he/she didn’t know the syllabus well (syllabus is not that tough) but because he succumbed to the pressure built while giving the exam it can be due to anything(varies from person to person), to name a few
not able to build enough speed during the paper,
checking your clock (time remaining) unnecessarily again and again,
fear of doing a question wrong,
spending too much time on one question etc etc.
