For the JEE mains May 2021 session you can apply now during the January session or as the NTA had said they will release the application forms for every session individually, hence you can apply then for the May session.

You can apply for may session until January 16, 2021 and pay the fee till January 17, 2021 along with February, March and April session. The application window for May session will be again opened later and the dates for the same are not yet announced. You need to apply for a particular session when the application window is opened within the stipulated time. Right now you can apply for February session and the remaining three sessions.
