At time of jee adv 2021 admission process,will we be asked to upload our OBC NCL certificate,what if I don't have it at that time?Will I not be able to give jee advanced 2021?Will my candidature be cancelled if I submitted undertaking at that time & not able to produce certificate during admission?

The best option is to get all your documents completely available and in the correct format before the starting of counselling dates and admission processes.
If you do not have your category certificate till now, you have submitted the undertaking regarding the same there are chances that it might be accepted but you have to produce the document compulsorily at the verification Centre for final admission.
