The medium for imparting knowledge and instruction for various subjects in BAMS all depends on the region where the institute is located. You can take Hindi, English or any other language as the alternate language but you must have a minimum Knowledge of Sanskrit. It will help you very much as most of the ayurveda text are in Sanskrit and without the basic knowledge, you willfind it pretty difficult yo cope with it and will help you to clear base pf every subject and understand the concepts better.

Yes, you can. There are several translations available.
But,
Are translated texts enough for me to learn Ayurveda?
No, Not at all. It will not even teach you 1% of the whole science. All texts are in Sanskrit and minimum knowledge of Sanskrit is required to understand the text.
(You will realise this when you learn the Padartha Vigyan text in 1st year)
Can I become a good Vaidya without learning Samhitas written in Sanskrit?
NEVER.
Can English be the second language of learning and understanding Ayurveda?
Why not! It can be English, Hindi , Malayalam, Kannada , Marathi or any other regional language .
