I hope you are doing fine, Artificial intelligence is way of making intelligent system which thinks like a human brain. To learn AI you need to learn about human psychology, human philosophy, neuron science, mathematics, biology and typical computer science.
Where as information technology is part of computer science. In which main focus is concentrated on software based solution. There is no strong mathematical and computational background is required.
Application of AI:

- Neural network, Neural language processing
- Intelligent robots
- Vision system
- Fiction example is, JARVIS of movie Iron man series.
Application of IT:
- Business systems, data and communication
- Computer programming and technology
- Network security
- Quality assurance analysis
- Database management
If you ask me i would suggest you to go with AI because Artificial Intelligence in the future of next generation.

I agree AI as a branch has immense possibilities and will definitely be high in demand in future. However at present in India, IT has broader career scope and prospects. Besides IT Engineering, you can parallelt develop interests in AI, ML and other New Technologies. Hence CSE and IT are broader branches and have a better bandwidth of education and academic as well as employer outlook. If youre interested you may definitely pursue Elective Courses, Certifications, Projects and Internships in ML & AI, but only if yore interested.
