Hello,
Yes going through NCERT Biology of Class 11 and 12 will bring you good score in NEET if it is done properly.
Similarly, for AIIMS it is suggested to use NCERT books for preparation along with other AIIMS books as that would feed you with the sufficient information.
Rest, if you have time you can go through the other books as well as keeping extra knowledge can never be harmful.
