As.per your rank you will definitely be able to get one of the IITs.
I would recommend you to choose the only branch you are interested with,all branches are good it depends on you, how you preform in your respective branch.
If you choose CIVIL/EE you will be left with many govt. Jobs also you can try for the GATE exams which is a gateway to many prestigious PSUs.
Also you can go for the ESE exams conducted by UPSE.
So, overall three are many choices for you for getting into govt. Jobs.
