It is not clear from your question what are you doing now in academic but it is sure that you want to do government job after msc anaesthesia so it is possible to get government job after masters in anesthesia as a assistant professor.
Upsc recruited msc students post graduation degree in the concerned speciality or super-speciality mentioned in Section A of Schedule VI from recognized Teaching Institute i.e. Doctor of Medicine (Anaesthesiology) or Master of Surgery (Anaesthesiology) or Diplomate National Board (Anaesthesiology).you can check regularly the website to know the vacancies.
