under the BEST OF 5 SUBJECT rule is any language subject like English or Hindi mandatory to be counted while calculating the overall percentage? Or any elective subject like AI/IT can replace HINDI?

Yes while calculating you best of 5 percentage in boards, English is a mandatory subject and to be counted in while calculating the percentage. Otherwise you can replace the other core subjects like Maths, Physics,etc with elective or optional subjects like IT, etc.
