First of all there is no provision to delay your admission. Once you have been alotted the seat then you have to report at the reporting centre irrespective of the fact you have opted for float,slide or freeze otherwise you will loose your seat and you will be kicked off from the seat allocation process.
Secondly there is no option of flip as far as I kbow according to JOSAA 2017 rules(not sure if it is added this year).
Third, for exercising float, freeze or slide you ned to download seat acceptance form from JOSAA login and fill and there is a option of freeze/float/slide there which you have to tick accordingly and submit it at the reporting centre. The pricedure is according to 2017 and it might have changed this year which you need to verify.

If you want to postpone then it is better not to report at reporting center.
Freeze : This option is to cnfrm your seat
Slide : You will get different branch in same institute
Float : Both institute & branch will change based on your higher preferences.
