The only eligibility criteria for UPSC or any State Level Civil Service Exams for that matter is graduation in any discipline from a recognized university, even final year students are eligible to apply.
Now, coming to your question, UPSC or State Level Civil Service Exams more or less follow the same pattern, you'll be glad to know that humanities subjects play a huge role in these exams. Subjects such as history, polity, economics, geography, ethics etc. So, if you're weak in MPC, then it in no way can provide hindrance for you. If I talk about UPSC, in prelims there's only one paper of CSAT which involves maths , english, logical reasoning etc but it's qualifying in nature. You need to get only 33%, that is 66 out of 200. For General Studies Paper-I it does consists of general science, and topics related to Ecology and Environment, but there're also history, geography, economics, polity etc.
Even in Mains, GS Paper-III, there's small portion of topic that consists of Disaster Management, Security, Economic Development including Environment and Technology,Biodiversity. But, it's a writing paper for 250 marks and as per last few year trends, mostly current topics are being asked, so a combined approach of static as well as dynamic work here.
UPSC syllabus is more inclined towards humanities subject , even through there's bits and pieces of science in prelims and mains, but definitely it doesn't cover the entire portion of the syllabus and if you like humanities subject, you can persue graduation in any of these, it'll be added advantage to you, also you can take your graduation subject as an optional while writing UPSC.
