Hi! Yes, you are indeed eligible for JEE Mains and Advanced in 2021. For JEE Mains,
1. You should have passed their class 12 examination in 2019 or 2020, which you have! Remember one thing though- only three consecutive attempts are allowed for JEE Mains, so be careful. There is no age limit, so that shouldn't be a problem as well. A gap of one year after 10th won't have any effect here. So you need not worry about that.
2. You should obtain a minimum qualifying score in the paper. For different categories, the qualifying score is different.
3 You should have taken at least five subjects for the 12th class or qualifying exam (Physics, Chemistry and Mathematics compulsory). So if you took these subjects, you are eligible for JEE Mains. In order to apply for Advance, you need to qualify in JEE Mains first. Remember, you can only give Advanced twice, so prepare wisely.

In 2020 thr upper age limit 25years old in December 31st for general category.
But supreme court order that no upper age limit is require for neet examination from 2021.
So you can apply for your neet exam.

Hi Aspirant! As your caste certificate of SC category was made in 2017, and of course, it is valid for NEET 2020. Even it is valid for NEET 2021,22,etc and other competitive exams. once you made an valid caste certificate then you have no need to create another certificate for SC category student. for kind information i have made an caste certificate on 2014 and valid in 2018 counslling even today is also valid !

You can use a 2017 edition, there's no issues with that but make sure to match the syllabus point to point. There might be some changes in the pattern and syllabus so look into that and whatever your arihant 2017 edition cannot cover, you can look into that online or if you have other books you can try them out.

If you are technically qualified and have good resume to show, it shouldn’t matter. But, during placements some of the companies ask for the gap not to be more than 2 years. You will have to justify the cause of your gap with a valid reason during the placements interview.
I suggest you explain with good reasons for the discontinuity and show what you have learnt from it and how you have grow stronger because of these difficulties and speed-bumps in your career.
