as per the eligibility criteria of AAI ATC Exams, you are eligible to attempt the AAI ATC Examination provided that you have a minimum of 60% marks in your Bachelor's Degree and you are within the age limit of 27 years.
No you can't apply for the AAI Junior Executive Post because its compulsory for it to have physics and mathematics in your BSc Course.

The eligibility criteria for AAI Air Traffic Controller is that a candidate must have passed Three Year B. Sc with Physics and Mathematics or Bachelor’s Degree in Engineering in any discipline with Physics and Mathematics as subjects in any one of the semesters curriculum and must score minimum 60% marks from a recognized board.
SO if you have studied Mathematics and Physics in B.Sc then you are eligible to apply for AAI ATC.
Yes you can apply for Junior Executive (AIR TRAFIC CONTROL) , you are eligible for that. But for Junior Executive(AIRPORT OPERATIONS) you need to have a MBA along with your BSc.

The editing portal is activated before you appear for the examination and as per terms that is considered the final editing for that particular session and as you have already appeared you can't edit that now after giving exam and recieving results, you can now appear for mains counselling or if you wish to give advance, you have to wait till the next year's jee main exam.

It's so sad to hear that you did such a minor mistake in such important Examination.
JEE examination is the official examination for undergraduate courses in the most prestigious colleges of the country, such as the IITs and NITs. The JEE Mains exam is held twice a year and the JEE Advance exam is held only once throughout the year, and the counselling is done by JoSAA to get the Seat distribution and final admission.
One should be very careful while choosing the Category Stream, because it changes the entire complexion of Seat availability for different streams and different categories. The category Cut-offs are also different so it's very important to pay complete attention while filling the application form.

As you have not declared yourself as a EWS in the first place you are not eligible for the EWS cutoff and hence not eligible for JEE advanced.

The categories which you filled during the jee main exam application can not be changed at the time of jee advance exam. The category which you fill on jee main exam is considered in jee advance exam.
So unfortunately you can not fill the jee advance form through the EWS category. As there is no alternative way to change the category.
You can try admission to other colleges with this percentile on the basis of jee main exam result.
