The options that you chose is very perfect, but as per institutions Amrita University is a renowned institution and better preference than Gitam University. But out if the topics that you have selected B.Tech in CSE is better than M.Sc in Data Science, however B.Tech degree would be easy for you to avail good placements. The cutoff trends changes every year and it depends on the number of students appearing in the examination, difficulty level, number if available seats, etc.
According to your mentioned marks and previous year trends, your rank might be in the range : 18500-25000 (this may or may not be accurate due to varying trends every year).
Though you have a low probability of getting CSE in Bangalore campus.

The cutoff trends changes every year and it depends on the number of students appearing in the examination, difficulty level, number if available seats, etc. Getting a CSE seat is very hard these days as it has huge demand.
For open state quota previous (2017) closing rank for CSE was 1813. So there aren't much chances according to this. You can try applying for other branches in their other campuses. You can check all options with AEEE here -

While all the three Institutes mentioned (Sastra, Amrita and HITS) are good colleges for chemical engineering, if we consider several aspects like educational facilities, peer group, campus life and most importantly placements, I would suggest you join Sastra University.
Moreover, Sastra University is known for its research in chemical engineering and there are some of the core companies that comes for recruiting chemical engineering students with average salary of about 9LPA.
