As you are pursuing two degrees , you have two 6 months internship instead of one in comparison with single degree students.That means your whole 5th year would be spent in doing internship.Also the one year internship can be done with respect to your Btech branch and in the same company.That means if your branch lets say, is Computer Science you can do internship for one year in an IT based company(irrespective of your MSc degree).Also doing one year internship in the same company increases the chance of getting pre placement offer by them.

There are no BTech Information Technology courses in BITS.
Both VIT/BITS are good along with Nirma or PDPU in Gujarat. In fact, BITS is better than VIT in so many aspects. I would suggest you to aim for BITS as only VIT Vellore Campus is considered to be better among all their campuses. BITS has its own value as you might know, it focuses on your all round development and ensure a smooth career journey from college to your company. The college experience will definitely be one of the best which will allow you to be experienced professionally by the end of your final year.
Colleges in Gujarat like Nirma University and PDPU are good as well, they have really good placement packages and have around 80-90% placement percentage. One huge difference which you may notice is the fees in these colleges are comparatively less than BITS or VIT by a huge margin. So, do consider all the points while deciding your college.

Don,t worry if you wish to opt your seat in the Vit then after some deduction in fees they will give you money back to you. Your 12th original mark sheet will also be given back. Don,t hesitate to give all the exams and choose best among them.

If you are willing to get admission in BITS , then a candidate must have passed from a recognised Central or State board or it should be equivalent with Physics, Chemistry and Mathematics and adequate proficiency in English with minimum 75% aggregate marks in PCM with at least 60% marks in each of the Physics, Chemistry, and Mathematics / Biology subjects.
Further admission is purely based on the merit and the merit position of the candidate for admission will be based on the score obtained by the candidate in the BITSAT - 2020 examination .

Till now, there is no official announced by BITS Pilani regarding the increase of seats in the engineering course. BTW, if we try to predict than due to COVID-19 pandemic, the students applying for BITSAT will decrease, then the cutoff will also be lower, so clearly, there is no chance of increase in engineering seats in BITS Pilani.
