Assuming that you belong to general category you do not have chances of getting seat in CMR INSTITUTE OF TECHNOLOGY in COMPUTER SCIENCE AND ENGINEERING (ARTIFICIAL INTELLIGENCE AND MACHINE LEARNING. Ideally, it is best to have a diploma in the related branch only, but as you are looking for a change from EEE to CSE it is possible.
I would also like to point out that the eligibility criteria vary from one college to another.
LPU might offer a lateral admission in Btech CSE with a diploma in any stream. Other eligibility criteria require you to have at least 60 percent in diploma and qualify for the entrance examination.

Since the branch selection is totally upto you as of your interest so I can't suggest you for which branch to go because of course just for the sake of good package you can't study the subjects in which you don't have interest straight for 4 years.
So, comparing these colleges in placement wise:-
The highest package offered by MANIPAL JAIPUR is 40lpa and the average package offered is 6lpa.
Whereas the average package offered by BIT JAIPUR is same as MANIPAL JAIPUR but the highest offered is 32lpa.
Now, talking about CMRIT the highest package offered is 11.76lpa and the average ranges around 3.5-4.5lpa.

CMR University is a private university located in Bengaluru, Karnataka. This college provides many UG and PG courses. For B.Tech courses the fees range is from 7.8 lakhs to 9.2 lakhs. This university was started in 2016. So there is no past placement record for B.Tech batches. But seeing the other courses placements, it is estimated to provide good placements.
Atria Institute of Technology ( AIT ) was established in 2000 in Bengaluru, Karnataka. Here the placements for B.Tech courses are quite good. The average salary package is around 3 LPA, whereas the highest package is around 7-8 LPA.
From these two, AIT is better.

SJBIT, CMR has AAA rating in the field of Engineering while BNMIT has AAA+ rating in engineering. For CSE, BNMIT is better than both of these even in placement ranking as BNMIT has 77% placement in the CSE field which is the highest if compared to other branches. In SJBIT and CMR, information technology has more placement opportunities. So, BNMIT can be preferred for CSE over SJBIT and CMR.

MVIT have decent overall ratings. They have good but inconsistent placement records, average placement record is around 85%. Highest package offered is 25Lakhs per annum, lowest package offered is 3Lakhs per annum and average package offered is around 5-7Lakhs per annum. Top recruiting companies are Amazon, Bosch, TCS, etc. They have good infrastructure and good teaching faculties.
CMRIT have good overall ratings much much better than MVIT. They have good but a bit inconsistent placement records, average placement record is around 80%. Highest package offered is 30Lakhs per annum, lowest package offered is 3.5Lakhs per annum and average package offered is around 8Lakhs per annum. Top recruiting companies are Deloitte, Accenture, TCS, etc. They have good infrastructure and good highly qualified teaching faculties. Atmosphere here is wonderful.
I would suggest you to go with CMRIT.

JSSATE, Bangalore and CMRIT, Bangalore are both quite similar in their infrastructure. They have huge libraries, laboratories, cafeteria, Wi-Fi enabled campus, gym, etc,.
Both the Colleges accept COMEDK UGET, KCET and the latter also accept JEE Mains. The total Fee Structure in the former Rs. 2.35 lakhs and in the latter is Rs. 20 lakhs.
The placement in CMRIT is good when compared to that of JSSATE. The Median Salary in JSSATE is Rs. 3.20 lakhs/year and in CMRIT is Rs. 3.5 lakhs/year.
Extra-curricular Activities are encouraged equally in both the colleges!
