The three subjects you have mentioned have there own importance and three of them are equally advantageous for a student who want to pursue it as a career. All this courses have employability as well as very good career growth.

• CSE with specialization in AI and Data Science
• ECE

Thus if you are sure that you like AI and Data Science then make it your first criteria. ECE have nothing bad but the industrial sectors are not that much of CSE and as most of the students don't get core field jobs in ECE then they have to move to IT with lower salaries.
