I would suggest you to write on that if this option is not available ,then your course is not eligible for the IIFT application

yes, you can do post graduation or masters in two different subjects. But not at the same time, otherwise one degree would be invalid.
You can do one after other. And yes, it is useful for some courses. Also, you know, knowledge and education never go waste. It has benefits in specific jobs or fields mostly in teaching. if you have the capability, ability and capacity to pursue masters twice, go for it. It will give you some benefit for sure and no harm in doing so.
One degree you can pursue regular, other you may do from open along with some job or other things

see actually there is no particular b.sc course or professional degree course offers just on cloud computing. if you opt for b.tech in computer science or cse specialize with cloud computing you may get valuable insight on cloud computing while studying. or you may opt for b.sc in computer science or bca course to get occupied with computer science related courses.
however the best course would be b.tech in cse or cse with specialization of cloud computing.

This is the criteria given or last year student on the official site :
Candidates in the final year: Candidates with “promotion/pass” instead of “award of marks” certificates in any of the last two years of the bachelor’s program can enter the “Promotion or Pass” option in the application form. This will allow the candidate to complete & submit the CAT2021 application form despite the requirements of minimum eligibility criteria (45% and 50% [or equivalent CGPA] respectively). This eligibility relaxation is also applicable to those final year students with “award” of marks. • This exception is available only to candidates who are completing the bachelor’s degree this year or are in the final year bachelor’s’ programme (graduation years – 2021 and 2022)
