Admissions to IITs is done on gate score and not marks you have scored. So, the result is highly unpredictable where thebhighesg and lowest marks are the deciding factor of the test.
Till the orevious years, a score of 70 would be considered good to get a seat in the IITs. Since, you have a reservation, you're in a beneficial state. The chances of your getting into IIT is good. But then again, we cannot rely on the previous years data as anything can change at the last moment.

no it is not always that all subjects there is interview sessions, some of the subjects admission is done only through gate score, once the application is submitted candidates selected by there gate score on respective subjects, now if the iits exam authority can makes it challenging for some of the course to have personal interview and gd rounds, so you need to wait for the latest advertisement for iits to check the admission process.
see your score is really good, however psus cutoff varies year to year and depends on number of vacant seats and questions level difficulty in gate exam, so if the vacancies are less there will be high cutoff demand.
