In order to get IITs you are advised to study really hard in terms gate preparation. IITs are the topmost institutes of India..
For this you have to be in top 500 at least . But it will be more helpful if you go for top 200.

Yes you can change your category in gate 2020 application form. The correction date for category is from last week of October 2019 to 1st week of November 2019.so do it fast otherwise you will not able to change after that.
