As per your query No you can't do 2 master's degrees together, in any of the colleges or universities you have to complete one degree at a time .so you can pursue your master's in one subject first then if you are interested do master in others subject to.
Otherwise, after one master's degree do some work on it and after that do another one

Yes absolutely you can go to IISC to pursue your masters degree after studying in IIT for your undergraduate degree. IISC Bangalore is one of the top University in India.

As per your query, you don't have to score 60% only in physics, chemistry and maths. For getting admission in IISc one should have to score 60% and above in class 12 which includes all the 5 subjects. This criteria is different for different castes but you have not mentioned your category so here I'm mentioning percentage for all the category. For general category you have to score 60% and above,for OBC and EWS category you have to score 54% and above and for SC/St/PWS category you have to score only 30% in your class 12 class examination. To apply for the admission in this institute, candidate has to fill the online application form issued from the official website of IISc Bangalore. In this institution, admission of candidates happens on the basis of their score in the exams like Jee M ain , JEE Advanced and KVPY. One should give any of the one exams to get admission in IISc Bangalore.

I think I might be eligible to answer this question of yours as I am in IIT Roorkee in biotech branch.
Honestly I would say the work load in our branch is very less compared to other branches in our college and that gives the students enough time to follow something that is not of the curriculum.
If you are interested in bio, then I would say it would definitely be worth it as around 5 of our batchmates who were not at all even interested in bio are now into bio so much that they will be going into research fields in the future.
There's a worldwide competition called iGEM regarding bio field only, in which our institute is a gold medalist. Students need to go to foreign and the trip is sponsored by the institute.
Although I am having interest in civil services but looking at some faculties of our branch, I sometimes admire them a lot and they sometimes force me to look upon this field.
See, if you are interested in bio, then I say make your aim as IIT ROORKEE BIOTECH BRANCH, I promise you will not doubt your decision even a single time.
Although many look bio as not a good branch, just forget them! In foreign bio is compared with computer science and the scope in India is only to grow.
We also received an email that the target of National biotechnology development is to achieve US$150 billion by 2025 hence you can imagine what heights this field will see in the future.
It would definitely be worth it if you are so much interested in this field.

IISc offers integrated PhD programme for students who have obtained a bachelor's degree in basic sciences/pharmacy/agricultural/veterinary sciences from a recognized University. You are also required to clear Joint Admissions Test (JAM) or Joint Entrance Screening Test (JEST) to qualify for the integrated PhD programme.

Yes, you can get admission in Bachelor of Science (B.S) in to Indian Institute of Science, Bangalore based on NEET UG score. The following scores are accepted for admission to B.S
Candidate must be qualified in any one of the exams mentioned above and the exam result must be valid as on 01 August 2022. The eligibility to get admission is that a Candidate must have passed 10+2 or its equivalent examination in 2021 or appearing in 10+2 examination in 2022.
