the both of the institute you have mentioned is excellent for its academic curriculum, college infrastructure, faculty students ratio, research opportunity, excellent labs and exposure for international internship. there is many notable alumni you may have heard of, who has completed their bachelors from iit kanpur or Indian institute of space science and technology. however based on the students review I would prefer to IIST for aerospace engineering since it is well connected with ISRO, which gives the opportunity for students to real time practical experience while studying the bachelors courses.

There is no compulsion for wearing shoes inside the IIST Campus or during the lecture hours in the classroom.
But shoes are the decent uniform which you should wear during formal classes and during registration time, it creates a good impression on the official and the instructor as well.
Shoes are also mandatory during laboratory classes.

Yes as far as Undergraduate Admissions are concerned, IIST does have its own UG Admission Test besides accepting JEE Advanced Rank and Score for Admission Purposes. You can opt for either of them as per your convenience

Because the total marks in jee advanced vary from year to year, I will state the percentage of marks required in jee advanced to gain admission to iist. It is 20% in the general category, 18% in the obc category, and 10% in the sc/st/pwd category. Although a student must get certain minimum grades in physics, chemistry, and mathematics on an individual basis.
Coming onto your first Questions, in order to become a scientist at ISRO you need to have a graduation degree at least with 50% minimum marks from any recognised college and then have to attend the ISRO entrance qualifying examination for further procedures.
The Second question of to select which course in IIST, it pretty much depends on on the score and the rank you have Scored in JEE advanced that whether you are eligible for B-Tech course or for integrated 5 Year Course.

To take admission into IIST, you are required to give Joint Entrance Examination (Main) conducted by NTA to qualify yourself to appear for Joint Entrance Examination (Advanced) conducted by IITs and secure the minimum prescribed category-wise marks in JEE (Advanced).

To qualify in JEE Main you must score the minimum cut off percentile specified for the category that you belong. You haven't mentioned your category. Here is the cut off percentile in JEE Main
The JEE Advanced cut off rank to get Admission in to IIST is as follows

Dual Degree
Thia was the cut off in 2020. You need to score a little more than previous year cut off to have decent chances of getting seat because cut off may increase or decrease depending on number of candidates appeared, difficulty of exam, top score, number of seats available etc.
