As i get from your question, the most preferred branches include CSE , IT and ECE . Rest all  depends on your interests. Core branches have an advantage of vast government job oppurtunties tied to them and the non - technical ones have a hand too. Rest depends on your hard work after getting into IITs. IITs are  premiere autonomous public technical and research universities and they are the finest institutions of India.

You can take admission in IITs by JEE Advanced examination.

NITs are premier autonomous public universitites.

You can take admission in NITs by JEE Main examinations.

IITs are definitely a better choice for EEE as they will offer more opportunities for your career whether you wish to persue a job or research.

You can get some new IIT's in low branches , and aprt from these you can also get BHU/Dhanbad in branches like metallurgy , mining etc .

Apart from iit's you can get IIST , RGIPT , IIPE so you can try for them also based on your jee advanced rank . You can also take admission in IISER .

Acoording to me I will go for IITM mechanical because :-

1) B.tech degree is better than a dual degree because if you are capable enough to do a B.tech from IIT you can try for a MS from abroad rather than doing a M.tech from IIT.

2) Even though there is very little difference between Madras and Kgp in terms of academic exposure and opportunities, still IITM should be preferred since Chennai is a metropolitan city whereas Kgp is a bit remote with not good connectivity.

However mechanical and electronics are two different branch, so according to your interest in these two streams you should choose your future field.
