during josaa registration i don't think you need to upload any documents .you will get to know by yourself what are the things needed to be uploaded while registration . but you will need the documents at the time of counselling or admissions .there you have to presents

Based on your category rank , it is very difficult for you to get any NIT or IIIT . And also ,to sit in JoSAA counselling firstly you have to qualify your category based cut-off for JEE Mains. Only then you will be able to sit in JoSAA

The JoSAA counselling is scheduled to start on 6th October 2020. The Joint Seat Allocation Authority will start the JoSAA 2020 counselling in online mode at josaa.nic.in. Registration and choice filling for JoSAA counselling 2020 will have to complete by October 15.  There will be six rounds in total

I don't think you need a Transfer Certificate for admission into NITs or IITs. If it is needed you may visit your school to collect another. There won't be huge problem I guess. You need following documents for Document Verification. You need to upload these documents online.
