Yes definitely you can give gate exam under mechanical after production engineering. And if you score good rank under gate exam under mechanical than your chances of getting admission in reputated colleges and iits will increase.

You are allowed to appear in any GATE paper you wish to, provided you meet the prescribed eligibility criteria. That being said, it will be upon you to ensure that your GATE paper is relevant to what want to pursue afterwards.

I think 1 year is sufficient time for preparing for gate exam. So if you wishes to join any coaching class than you can do that. And make a schedule and study accordingly. Focus on the weaker section and topics and prepare very well.
