Dear aspirant,
To be honest I think pes University cse branch would be a far better option than vit vellore cse. In these private colleges the college name doesn't matter. If you have the required skills then definitely the company will hire you irrespective of your college name.
Now coming to the next part of your question, if I had consider the ROI factor pessat will beat vit vellore in this because in category 3 the cost of a BTech programme would be somewhat around 22-23L .

the PESSAT Examination syllabus comprises of subjects such as Physics, Chemistry, Mathematics and English. The syllabus is based on the current CBSE 11th and 12th standard portions.
In order to prepare for the exam, you can study from the NCERT textbooks, as they are the ones that are used for CBSE board. You may also practice from the solve papers as they give you a good idea as to how the questions in the exam are asked. If you are preparing for other competitive examinations, then that is enough for PESSAT as well, as this is also a kind of competitive exam.

Hope you are doing great as per the question asked by you yes PES university is one of the best college as compared with other colleges it has its own brand value and reputation. Yes you should certainly give PES entrance difficulty level is not much more as compared to JEE mains but you may expect some very good questions in it. From past year trands rank anywhere around 700-800 will certainly land you into CS branch in PES.

I hope you are doing good. I would like to tell you that cutoffs depends on many things like category, stream you are looking for,etc. It would be very difficult to tell without knowing this.

see in case, an individual has been living in India for minimum 182 days in the previous financial year or has resided in India for 60 days in a particular year and has lived in India for a minimum of 365 days in the last four years is considered to be a Resident of India. since you have completed your 12th grade from Indian state you do not belongs to NRI quota. see In nri quota there is less number of candidates, so competition levels seems lower than other category seats, but fees structure for NRI quota is high compare to any other category.
so I suggest you to apply as general category.
preparation wise for PESSAT Exam studying from just your respective board exams material will not be sufficient as this is a competitive exam and the standards would higher due to it being a competitive exam. Your material would be good enough to learn all the basics and help to build the foundation of the concepts but for preparation of the exam it would be best if you use some of the books recommended for competitive exam.
With a rank of 3341 in pessat and considering you would be joining pes University main or electronic one.
In main campus you can get core branches like mechanical, civil and in extended round there is chance to get even EEE branch. In the electronic campus you would easily get non core branches like EEE and ECE and in extended rounds may be cse.
