It depend on your goal. But I suggest you to choose that subject in which you are very good in that subject and you can continue your higher education in that subject. It means if you are good in chemistry than you can choose chemistry in ug and pg. But

I believe SL stands for standard level. Let me tell you that your chances of securing a seat in IISC and IISER will not be impacted because of these subjects. Also, youyou n not to take up any additional subjects in mathematics and physics, these subjects are good to go

No any book is good enough for theory as well as practice. Yes, there are some books in the market but I don't think they are of that quality. For physics you can have Concepts of Physics by dr h c verma for theoretical and subjective practice purpose and

Their is an exam which provide you a good scholarship. It is KVPY this exam offer you bsc course and provide a stipend during this course. The exam of this is not so easy.  So you can give this test as its eligibility is 12th and it requires PCM also.
