Hello Muzamil Parray,

- Dairy Chemistry (Jenness? and Patton)
- Cheese ( Frank Kosikowaski ?)

- There was one text book on Market milk it was like bible for us
- There was one text book on spray drying also it was like a bagavthgeeta for us
- There was lot of books on cheese published by Pfizer, try to get those they used to give it for free, excellent collection.
- There was one dictionary of dairying real real nice book.
- I believe there was one book on Condensed milk also real good one
The best book on the subject of the American food industry is Joel Salatin's "Everything I Want to Do is Illegal". Joel walks you through the ludicracy of our 'modern' food system, pointing out the obvious and not so obvious hindrances to the small farmer who just wants to sell his product. Comparing the small farmer to the large multinational CAFOs will make you want to find the nearest farmer and give him or her a hug. You will learn why organics are so costly, why food-borne disease is such a problem and why buying local is the best way to ensure the safety of your food.
If you are not familiar with Joel and his Polyface Farm, this book is a great introduction to an alternative line of thinking that will revolutionize how you look at your dinner plate.
