It is very normal to feel anxious about your retaining power now that the consolidated syllabus of class 11 and 12 can be quite intimidating.
1. Revise. If you come across chapters you are having trouble remembering, revise a topic you aere familiar with. The familiarity will boost your confidence and help you learn the parts you are uncomfortable with.
2. Understand. If mugging up is tough for you (Which personally is not my forte either), then logically reason out each event taking place in biology and chemistry. Relating concepts with objects and situations surrounding you can be a good way to make studying more fun.
3. Solve. Continuously test yourself. Start with the easiest questions and gradually advance to the tougher ones. Getting MCQs right will make you feel that you know that part. However, keep revising for it to be easy to recall when you need.
4. Teach. Talking about what you know and imparting knowledge is a great way of increasing self-confidence.
5. Mental Math. Work your brains while calculating instead of using a calculator. Work out half an hour for solving some sudoku. These will help yuou sharpen your brain.
6. Believe in yourself. Self doubt is just another challenge that will stop you from reaching your goal. All of us have trouble remembering things. Do not compare yourself with others around you. Everyone has their own pace of learning, hence run your own race till you reach the finishing line.

Well,if you are really motivated then you can definitely do your syllabus for neet even now.
I would suggest you to do your class 12 syllabus+class 11 organic(because anyhow you'll need it in class 12)+mechanics +physical chemistry class 11+class 11 inorganic+biology chapters class 11 as many as you can. Rest of class 11 syllabus you can do after your prepared when you'll finish your class 12 syllabus properly.
It will be tough definitely but at least you can try.

So, what you need to do is, make a study routine, that includes all the subjects but for shorter amount of time, e.g. 45mins per subject.
On the next morning, revise what you have learnt the previous day, and then start reading the new thing.
This will help you to remember things easily and rebuild your self confidence.

The problem with you is that you have a belief of not having a good memory. Except for very very few people who crack neet have similar memory. It is like you have to read a chapter many times to fit into your memory and revise it regularly to get it on your fingertips.
Making notes of chapters will help you get through, especially for those which you find it difficult.
Try to limit your extra books especially in biology. Read only ncerts . It will help you alot.
Revision is the key for learning.

Firstly, about your self confidence. this often happens to people. but you dont need to lose hope. overcome your fears. if your mind tell you that you will forget, sternly reply back that you will remember and do all the things possible to remember that stuff. like write it down 5times, 10times or even more. make charts of formulas and stick them in the wall of your room so that it comes to your notice often and you remember back. try to revise a particular topic within 10days atleast once. you will see the time required for revision of that particular topic is decreasing day by day and this will boost your confidence. whenever possible after studying put your books down and test yourself.
now, coming to your neet ug preparation, in these few days of the preparation time left i would suggest you to thoroughly the ncert books, solve the previous years questions papers as much as possible and keep your doubts cleared at all points of time. this will again boost your confidence.
try and meditate for 10mins everyday.
