I am from assam state board. We have 6 subjects. So can i skip one of the subjects and still be eligible for jee?

Yes, You can, As per the rules of JEE Main, You need at least five subjects in the Qualifying Exam. Here Qualifying Exam is your 12th exam from any recognized Board, as in your case it is Assam Board.
But remember you must have at least five subjects so you can skip just one subject also You should have taken Science stream with mathematics in +2, for appearing in JEE Main. If you are hoping for IIT's then you must score at least 75% in aggregate in +2 to get into IIT.
